Yum! What is better than indulging in decadent Christmas cookies while sitting by the roaring fire while snow gently falls against a full moon night with Christmas lights twinkling nearby?
Yum! What is better than indulging in decadent Christmas cookies while sitting by the roaring fire while snow gently falls against a full moon night with Christmas lights twinkling nearby? Honestly I cannot think of much anything better. I love making Christmas cookies every year. And this year was no different. I wanted to share with you two of my favorites.
Of course there is the classic Christmas cutout cookies which every family has their own special recipe for those. But my next favorite is this chocolate mint cookie that never seems to last very long.
It is a rich chocolate chocolate chip cookie but instead of adding chocolate chips I add Andes Mints Creme de Menthe Baking Chips. I included the recipe below.
Chocolate Chocolate Goodness Cookies
2/3 cup semisweet chocolate chips
1 cup unbleached all purpose flour (for a healthy version you can use whole wheat pastry flour)
1/4 cup unsweetened Dutch-process cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup (1 stick ) unsalted butter
1/2 cup packed light brown sugar
1/4 cup granulated sugar
1 large cold egg
1 teaspoon vanilla
Andes Creme de Menthe Baking Chips
Preheat the oven to 325° F and line two baking sheets with parchment paper.
Place the chocolate chips in a heatproof container on top of a double boiler and place it over a saucepan of simmering water. (or if you watch them carefully you can just throw them in the microwave for a minute which is what I usually end up doing. A few less dishes to clean up because I do despise washing dishes!) Stir the chocolate chips until melted and smooth. Take them off the double boiler and set them aside.
Stir the flour, cocoa powder, baking soda, and salt in a medium size bowl then also set that aside. On medium speed in a mixer beat the butter and both sugars until creamy. On low speed mix in the melted chocolate chips. Add the egg and vanilla and mix until blended. Lastly right before the best part mix in the flour mixer until just incorporated.
Then the most exciting part! Mix in the 10 oz bag of Andes Creme de Menthe Baking Chips. I do admit at this point I will help myself to some cookie dough. Because it is just so good. But I am not advocating for this because no one wants an uncooked egg to give them salmenella positioning yuck!
Now you can start rolling out tablespoon sized cookies. You may use spoons for this, sometimes I use an ice scream scooper. Or if you are feeling adventurous just start rolling with your own two hands!
Place the cookies in the oven for about 18 minutes. Sometimes I will do it a little shorter around 12 minutes because I like my cookies to stay soft I am not a fan of crunchy cookies.
Once finished then sit down and dig in and enjoy those warm decadent minty chocolaty bites of Heaven!
